Whole Wheat Honey Cookies


(These cookies are the best!)
Physical Culture Honey Cookies

Ingredients

1 cup honey
1/3 cup milk
½ cup brown sugar
3 tablespoons butter
2 ½ teaspoons baking powder
4 ½ cups whole wheat flour
1 egg yolk
1 cup finely chopped pecans

Heat honey, milk, sugar, and butter to boiling. Cool. Sift flour and baking powder into the liquid and mix together. Add a well beaten egg yolk and pecans. This will be a very stiff dough. I use my hands to work and shape the dough just as if it were bread dough. Roll out thin on a floured surface to about 1/8 inch thick. Use dusting of flour to keep dough from sticking to rolling pin or surface. Cut out cookies in 2 - 3 inch rounds. Bake at 350 degrees on a lightly buttered cookie sheet for about  8 - 10 minutes or  when the bottoms of the cookies just begin to brown. This recipe makes a big batch of cookies.



Sweet Apple Nut Soup

(Completely raw - almost a dessert - a great snack!)

Ingredients

  1/2 cup nuts
2 large apples peeled, cored, and cut into small chunks
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon allspice
½ cup honey
3 - 4 cups hot water

In a food processor, chop nuts into small pieces. Add apple chunks, spices, and honey. Continue to process until nearly pureed. Stir in enough hot water to make the mixture a pleasant taste and soup consistency. Do not cook. (This is very easy to make in the Vita-Mix. See link below.)




Almond Cutlets

(A unique meat substitute made with almonds, beans, eggs and a little butter)
Macfadden Recipe
Ingredients  
1/2 cup raw almonds
1/2 Lb. frozen baby lima beans
2 eggs
1 teaspoon butter
Pinch of salt
Plain bread crumbs
6 pieces of celery about 4 inches long.

As an experiment, we made this in our Vita-Mix machine. It could probably be done in a regular food processor as well. First, cook the beans, drain, and add butter. Then chop up the almonds using the dry bowl. Then using the wet bowl, process the lima beans, salt, and one of the eggs altogether. Next, in a mixing bowl, combine the bean mixture and almonds and add enough bread crumbs to make it possible to mold the mixture into "cutlet" shapes. Divide it into 6 portions. Using your hands, make the shapes and insert a stalk of celery for the bone. Dredge in beaten egg and then crumbs. Fry or bake. Serve with tomato sauce.
